Strawberry Bars

CALLING ALL FUTURE COOKS!  It’s getting closer to the end of the school year! ... and for students, that means fieldtrips and outside class picnics. Well here is a recipe that not only packs well in a lunch box, but the kids can make them for themselves and their friends. Just think of the pride (and smiles) as your student starts passing them around!

Not into strawberry? Pick your own flavor by simply changing the jam.

Yields: 12 servings
Prep Time: 45 minutes

INGREDIENTS

bullet

1cup flour

bullet

1 cup rolled oats

bullet

½ cup butter or margarine, softened

bullet

1/3 cup light brown sugar

bullet

¼ tsp. baking powder

bullet

1/8 tsp. salt

bullet

¾ cup strawberry jam
(or jam flavor of your choice)

Preheat oven to 350º

METHODS:

1.  In a large bowl, mix everything but the jam.

2.  Measure out 2 cups of this mixture. Leave the rest in the bowl, and set aside.

3.  Press the 2 cups of mixture into the bottom of the 8x8 pan coated with nonstick spray. Use your hands or a spoon but make sure entire bottom of the pan is covered and pressed down well.

4.  Using a large spoon spread the strawberry jam evenly on top of the mixture in the pan.

5.  Take the mixture left in the bowl, and spread it over the jam. Press it down lightly.

6.  Bake it for 25 minutes. Remove the pan from the oven and allow cooling for at least 15 minutes.

7.  Cut the bars into 12 squares to eat & share. Once they are totally cool, wrap them up and they are ready to pack for any outing!
