Healthy and Tasty Chicken Stew
Let’s start the “New Year” off right with a
healthy yet yummy chicken stew (it states it
uses very few WW points also!)
This recipe takes advantage of using a
crockpot …so it gives you plenty of time to
start those exercises, ride a bike, or take a
walk ... while it’s cooking!
Of course if the Texas weather stays this
warm, you may have to turn on the air
conditioner to totally enjoy it!
MAKES: 10 servings

Ingredients:
* 1# boneless / skinless chicken breasts, cubed
* 1 (14 ½ oz) can diced tomatoes, undrained
* 5 medium carrots, chopped
* 3 celery ribs, chopped
* 1 large yellow onion, chopped
* 1 medium green pepper, chopped
* 2 (4oz) cans mushroom stems & pieces, drained
* 3-4 chicken bouillon cubes
* Chili powder
* Salt & pepper
* 1 Tbsp cornstarch
* 2 cups cold water (additional water as needed)
Directions:
1. Put all ingredients EXCEPT the cornstarch
and cold water into the crockpot.
2. In a small bowl, mix the cornstarch and
water together until smooth.
3. Stir the cornstarch mixture into the other
ingredients inside the crockpot.
4. Cover and cook on low for 8 to 10 hours.
