Casserole with Black-Eye Peas
LEFTOVER BLACK-EYED PEAS?

“Waste Not, Want Not."  Let’s start the New 
Year off right with a yummy casserole to use 
them up!  This is one of those recipes that not 
only helps get rid of leftovers …but it is so 
quick and easy using other items you 
probably have on your shelf.  Plus it 
customizes well to meet your families’ 
personal tastes!         

MAKES:  8 servings

Takes 45 minutes to prepare (10 for prep)

 

Ingredients:
*  1 lb lean ground beef
*  About 8 cups drained leftover black-eyed peas 
      (or two 32oz cans)
*  2 cups rice, cooked
*  16 oz diced Rotel tomatoes 
      (or any brand of 16oz diced tomato w/jalapeno)
*  1 small can of diced green chilies
*  1 cup cheddar cheese, shredded
*  1/4 cup onions, minced
*  1 teaspoon salt
*  1/4 teaspoon pepper
*  1 garlic clove, crushed
Directions:
1. Brown meat. 
2. Combine all ingredients in 13X9X2 casserole. 
3. Bake at 350 degrees for 25 minutes. 
4. Serve.  How’s that for “EASY”?

Note: need more spice? 
Add some chili powder or Cajun seasoning to browned meat
