Breakfast Carts
Elementary Schools
All elementary schools offer breakfast via four Hallway Buffet carts. Each cart serves up to 200 students in 15 to 30 minutes.
Our Hallway Buffet carts provide all the benefits of the traditional BIC program while greatly enhancing accountability and streamlining kitchen operations. The re-engineered BIC delivery carts, now deployed as direct service Hallway Buffet carts, continue to be the physical symbol of our ongoing "Beyond the Cafeteria" meal service initiative. We have realized many positive results since switching to the Hallway Buffet carts:
- 25% reduction in food costs by using Offer vs Serve instead of traditional non-OVS Breakfast in the Classroom
- More efficient and productive use of kitchen staff, fewer work related injuries, and increased employee morale
- Increased accuracy in record keeping for participation and production records
- Improved quality assurance for our customers
- Overwhelming approval of teachers, administrators, and students
Secondary Schools
All middle schools offer breakfast via a Grab & GO cart and serving lines in the cafeteria. High schools use two Grab & Go carts as well as the cafeteria serving lines. The Grab & Go cart uses the same general design as the elementary Hallway Buffet carts, but at secondary schools we use the student ID number and a on a Point Of Sale laptop.
With the implementation of the Grab & Go carts at our middle schools and high schools, breakfast participation rates reached almost 50% (up from the teens and lower twenties)! These carts are located in high traffic areas outside the cafeteria such as the front door and bus drop off points. The increased participation brought in an additional $950,000.00 per year over our 8 Middle Schools and 4 High Schools with no increase in kitchen staff employees.
